Check out all of the cameras available that would provide various features to enable crisp, sharp images and efficient work flower for your stock photography needs.  And remember, I’m only listing cameras that will produce RAW files (in addition to JPEG, TIFF, etc.), giving you the ultimate file size and color information. You can certainly use “point & shoot” cameras, but you will be greatly limited in what you can produce because (1) they don’t usually create RAW image files, which give you the most information about your image with which you can work in photo editing software and (2) you will be unable to exchange lenses for a variety of focal length shots, as most “point & shoots” have a fixed lens, not interchangeable ones.
